Handbrake is quite a good video converter
As long extensions are mov, mp4, m4a, it will work on iPhone X. However, you may need to be careful about the codecs that supported in iPhone X!

search on AppStore, there are many (*hint: from GoPro or Apple). Again, mkv is not iOS-codec supported, it may or may not work. Just try on.
